Five on Friday- Healthy Recipes & Spreading Kindness

Hey there Friday. It's been a fast week, but maybe because I've been soaking up this wonderful weather instead of folding the mountain of laundry in the extra bedroom...priorities...But let's get to it and then I should really fold some clothes.

Who uses the Pilates mat the most?
This week, so far I've done two Pilates Advanced Reformer workouts and two Pilates Advanced mat workouts. But if you asked who was on the mat more this week- I don't know if the answer would be Kemba Walker or my oldest. (See the picture below ha)
I snapped this picture earlier this week as I was cooking dinner. I asked my oldest what she was doing and she said "teaching Kemba, App (what she calls Yosef, the mascot for Appalachian), and Hugo Pilates." Adorable. So Kemba Walker, if you need a Pilates teacher, I have one in training for you haha. I shared earlier this week how I workout with kids. Check that out here. Side note- Can you tell who our favorite sports teams are? Daddy has trained her right. We're just missing Sir Purr here.

Peanut Butter and Honey Cookies
Yum! So I made these last night and they were delicious...and guess what?! They were made with all Organic ingredients, 100% Whole Wheat Flour and no refined sugar. All the more reason I can have one with my breakfast, right? Seriously though, they were a hit with the whole family and even hubby didn't notice they did not have sugar in them. I love cooking with honey! I made them with Bob's Red Mill 100% Whole Wheat Pastry Flour and the recipe came right off of the back of the bag. The recipe called for 1 cup of Honey, but I think you could get by with less if you wanted. I couldn't get a good picture of the recipe, so here it is in case you want to try it as well. These would make perfect Valentine's Day Treats. Speaking of which, I do have plans of making some not so healthy Valentine's Sugar Cookies before Valentine's Day.

Peanut Butter & Honey Cookies (Makes around 30 cookies)
Ingredients:
1 3/4 cups Whole Wheat Pastry Flour
1/2 tsp Baking Soda
1/2 tsp Salt
1 cup Peanut Butter
1 cup of Honey
1/4 cup of Butter, softened
1 Egg, beaten
1 1/2 tsp Vanilla Extract

Preheat oven at 350 and Grease a baking sheet (I used Coconut Oil Spray.)

Whisk together flour, baking soda, and salt. In a separate bowl, combine, peanut butter, honey, and butter. Then, add egg and vanilla extract and mix well. Slowly add flour mixture until combined.

Shape dough into balls (use about 2 tsp of dough per cookie) and place about 1 inch apart on the baking sheet. Using a fork, flatten each ball with a fork to make a crisscross pattern. Bake for around 10 minutes or until golden brown.

Chicken from Aldi
So I realized, after I shared my favorite Organic finds from Aldi earlier this week, I forgot something. (If you missed this post, check it out here.) Aldi also has a good price on boneless chicken breasts. Now, they are not certified USDA Organic, but I think they are the next best option- 100% Vegetarian Fed, No Antibiotics and No Added Hormones or Steroids. I paid $6.56 for a little over 1.5 lbs of meat.
So last night for dinner, I made Panko-Crusted Oven "Fried" Chicken using my package of chicken breasts from Aldi. You can find the recipe here. The only tweak I made was I added just a tiny bit of milk to my egg mixture. I used Ian's Original Panko Breadcrumbs to coat the chicken. It was delicious. We have a little bit left over, so I thought for dinner tonight I'd make some Honey Mustard to go along with it using this recipe.

Blessing Box
So this is currently going on around Charlotte and I think it is such an amazing way for us to spread kindness and peace into our community. Basically, the Blessing Boxes are a place to encourage and share acts of kindness. Once you've done an act of kindness, you record it and place it in one of the Blessing Boxes found across Charlotte. Read more about it here. Later this spring, the slips of kindness will be used to create a public artwork.

Blessing Bags
So feeling inspired to spread some kindness with the Blessing Boxes, I loved the idea of getting my little ones involved in this project and making "blessing bags" to give to others. I had my oldest paint the bags this week. This weekend, we're going to work on filling the bags with small snacks and treats.
Random Acts of Kindness Week is also next week (February 12-18th), so I thought the blessing bags would be a fun way to celebrate that and teach my kids about kindness. Here are some other great ideas to do with your kids.  Have a great weekend!

Saturday Reads and Inspiration



 Hello Saturday! Here are some great reads I've come across this week for you to checkout this weekend, including some inspiration for your Super Bowl Party tomorrow. Enjoy!

1. Olympic athletes that do Pilates- (read here.)
I shared this article this week on my Facebook page, but in case you missed it- check this article out! Missy Franklin and Kerry Walsh-Jennings are two of my favorites...I mean obviously they are both are in incredible shape, but I had no idea that they do Pilates.

2. Health benefits of drinking lemon water- (read here.)
I talked yesterday about why I drink lemon water. It is a great boost for your immune system because it is high in Vitamin C. But there are lots of other reasons to drink lemon water, such as reducing blemishes and joint pain. Plus- lemons give your water some flavor to help you increase how much water you drink.

3. Healthy and delicious Super Bowl Food ideas.
I'm still working on my Super Bowl menu, but I've seen some great ideas here, here, and here. I plan on teaching Pilates, taking a Yoga class, and then enjoying some yummy food tomorrow.

Confessions of A Pilates Teacher #1

Happy Monday! Where did the weekend go?! Anyway, today I'm sharing my confessions with you today...

While you may think your Pilates teacher is an indestructible super human, who eats all things fresh and healthy, commits to working out a minimum an hour every single day of the week, and the list goes on...You may be surprised to find out that your Pilates teacher is human just like you AND isn't the health whiz you imagined.

I confess:

1. I don't work out everyday.
Ideally, as Joseph Pilates would probably advise you if he were still alive today, you should aim to workout 5 to 6 times a week and incorporate 1 day of rest a week into your fitness regime. HOWEVER, does that mean that I always get that number of workouts in every single week? No! For example, this past month the stomach bug went slowly around our house for two weeks. Between taking care of sick ones and then getting sick myself- there were about two weeks that I only got maybe 4 workouts in. AND it is okay. The next week I got myself back on track because even if I don't feel like I always have the energy to workout- I'm happier, less stressed, and energized when I do Pilates. This makes me more able to take care of the little feet running around my house, my sweet husband, and even my Pilates client that walks in the door.... like the saying "If mama is happy, then everybody is happy." I know it is the counselor in me coming out, but I really think self-care is important and you should too!


2. I love Pizza, french fries, and did i say ANYTHING sweet!
Yes, I admitted it. I like to eat all of those things. Do I eat them every single meal? No, but on occasion I do enjoy them from time to time. The key here is in moderation. I don't follow a certain diet rather I strive (and am still learning) ways to live a healthy lifestyle. I talked last month about my goal being working on cutting out processed food in my diet. And I should probably say most processed foods. I may eat something that is processed, has way too much sugar, and isn't organic from time to time. But for the most part, I try to incorporate easy, practical ways to eat healthy. For myself, I've found things that make this lifestyle work for me. I like to cook with organic unrefined coconut oil for most recipes- such as banana bread muffins. I buy fresh or frozen organic produce as much as possible (especially the produce on the dirty dozen.) And I could go on...but my point is my goal is to eat well most of the time.

Pictured above is some of the food items that I try to buy Organic. Did you know you can buy a lot of Organic products at Aldi?! Keeping the grocery budget in line while buying organic sounds like a win to me! I'll have to share more of my Organic grocery finds at Aldi soon.

3. I won't think you are cheating on me if you take a fitness class besides Pilates.
I've talked about Yoga and Pilates the past two days (here and here.) I myself LOVE yoga and especially fell in love with it during my second pregnancy. In fact this weekend, I took two Yoga classes and did not do much Pilates. I've actually recommended to clients before to try out a Slow Flow Yoga class or Long Slow and Deep Yoga class. I think any exercise is good for your body and will complement the work you are doing with Pilates. I know it's nice to have variety in your workout from time to time as well. So whether it's Pilates, Yoga, Cycling, Boxing, Weightlifting, Dancing, Swimming and I could go on and on- just live an active lifestyle! I think the idea I'm getting at here is do what feels good to your body and enjoy it!

That's all of my confessions for now. I probably could share more, but then you might not want me to be your Pilates teacher. All jokes aside- we are all human. We aren't perfect. I like to give room to live a little bit in a healthy lifestyle and give myself grace- while finding the balance of not making excuses.
